Healthy Salad, Week Two

This salad was the bomb!! As my co-worker said while eating it, “I can feel the energy running through me”.

I took one 5-ounce container of braising greens (essentially different types of kale torn up into bite size pieces) and tossed it with lemon juice, olive oil, Kosher salt, and pepper. I then let it sit on the counter, stirring it occasionally, for about 30 minutes.

In the meantime I roasted a chopped sweet potato until tender, toasted some pecans, and cut up some Cypress Grove Lamb Chopper cheese. Then mixed it all together with the kale. And voila! Energy in a bowl.

Added benefit—if you mix up this salad before heading to work it will only get better as it sits. The acid from the lemon will continue to soften the kale giving it a soft, lettuce like texture.
